RECENT GUEST COMMENT:

I had a great time here at HMR!  We just bought a house here in Arizona so we will be back soon!  We think that we will be back here at least 6 times this year.  Dusty is my horse.  I am 11 years old and I love it here!!

WILD WEST ROUNDUP - June 11 - June 27:

It's two weeks of serious horsin' around.  Start by selecting "your horse" for the duration of your stay and getting him ready by learning how to correctly groom and saddle a horse. Then you will be ready for events such as team penning...yes, we rent cows, ground training in the arena, participatory round-pen demonstrations, and trail rides.

On Saturday June 19th, HMR is offering a special treat of an off-site ride of Escudilla Mountain, one of the highest peaks in Arizona. Our wranglers will head out early in the morning with horses in trailers to the trail head for a full day of riding, complete with a pack lunch perfect for munching on a rock at the top of the mountain.

Let us know right away if you'd like to join us our horses for some galloping good times!

WINEMAKER DINNERS AT HMR:

Wine is on the way, from Quench Fine Wines, to HMR, for two more amazing winemaker weekends.  (There will be plenty more throughout the year!)

July 23rd-25th:

Sonoma grapes...Teira wines. Join Don Donahoe, a member of the founding family of Teira wines, with another amazing wine lineup, of course, with scrumptious food pairings by our very own culinary team.  Meet Don and our new Executive Chef, Mark Silva, with a reception Friday night to learn more about, well, food and wine!  Then enjoy a five-course dinner on Saturday night.  We have already tasted the wines, (tough job, but someone has to do it,) and these award-winning wines with limited releases will knock your socks off!

August 13th-15th.

An International Tour.  Guest Chef Joel Harrington, Chef de Cuisine of Core Kitchen at The Ritz Carlton in Marana, AZ, will be joining our culinary team to pair 5 courses with amazing German and Austrian wines.  It's the perfect summer selection of wines paired with great, fresh summer dishes!

Wine Weekends in September, October, and November are in the planning stages, so check back in the upcoming weeks for more information.

MUSIC FROM GREER – concerts with altitude:

In 2002, Charlie and Mary Bast together with musicians Ted Cox and Martha McQuaid, produced the first Music from Greer.  The original artists performed every evening for a week-long chamber music festival.  By 2004, the audience grew too large for the local venue, the community of Greer hosted an audience of 300 in the 2005 season.

Music from Greer was continued to expand the variety of entertainment offered to concert-goers of the White Mountains and visitors.  Greer Arts and Entertainment is proud to present the summer 2010 schedule of concerts with altitude:

May 29 – Tawna Flake, fiddler and David Peterson, piano

June 19 – Ji Sun Lee, piano and Michael Lich, guitar, banjo

July 16 & 17 – Quartet Greer, strings and piano

July 23 & 24 – Paloma winds, woodwinds

July 25 - Kyle Malkin

August 7 –T for 5, Jazz Ensemble

Get out of the summer heat and enjoy the experience of a mountain concert.  Stay at Hidden Meadow Ranch on our “Music in the Mountains Package” and let us provide transportation for the short trip to Greer to participate in one of these great concerts!   In addition, HMR will have a CD of the weekend’s entertainment as a gift to take with you!

Visit www.musicfromgreer.com to read more about the history of these events, (information above is obtained from the website,) and to receive more information on the concerts.  HMR’s very own GM, Jane, is on the board of Greer Arts and Entertainment and plans to attend several of the performances!

This month it's a good, spring sandwich that is so easy to make... yet so good!

Tarragon Chicken Salad Sandwich :

2 lbs chicken breast

2 c white wine

1/2 c onion powder

Salt

Pepper

1 1/2 c mayo

1 c sliced seedless grapes

1/2 c slivered toasted almonds

Butterleaf lettuce

Croissants

Preparation-

Chop chicken into bite-sized chunks.  Combine chicken, white wine, tarragon, onion powder, and salt and pepper to taste in a casserole dish.  Cover with foil and bake at 375 until chicken is cooked.  Pour off juices into a sauce pot and reduce under low heat to one third. Cool, add mayo to juices. Mix chicken and mayo mix with grapes and almonds.  Put chicken salad on croissants with a leaf of lettuce.  Mmmmm.
